Cola / Habañera Baby Back Ribs
Oven 1 Hour l Quick Broil
3 – 4 pounds baby back ribs (2 meaty racks)
1 cup cola
1/4 cup cider vinegar
1/2 cups brown sugar — packed
2 habañero chilies — seeded/ﬁnely chopped
1 teaspoon salt
1 teaspoon black pepper
- In a small saucepan, combine cola, vinegar, brown sugar and chilies. Bring to a boil over high heat. Reduce heat to medium-low and simmer until mixture is syrupy. Taste, adjust ﬂavoring. Reduce heat to low and keep sauce warm while ribs cook.
- Place one oven rack in middle position. Place another oven rack in broil position. Preheat oven to 300°. Season both sides of ribs with salt and black pepper. Line a baking sheet with aluminum foil. Spray foil with no-stick cooking spray.
- Place ribs on foil and bake on middle oven rack 45 minutes basting ribs occasionally with cola sauce.Turn ribs and continue to cook additional 45 minutes. Brush with sauce occasionally.
- Set oven to BROIL. Liberally spoon remaining sauce over ribs and broil meat side up 4 — 6 minutes until ribs are done. Internal temperature of ribs should be at least 160°.
