Beer / Yogurt / Hot Sauce Wings
Marinate l Oven
12 wings segmented, tips discarded – rinsed / dried
1 bottle (12 ounce) beer
4 Tablespoons hot pepper sauce – divided
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cinnamon
3/4 cup plain nonfat yogurt
2 teaspoons soy sauce
1 Tablespoon Worcestershire sauce
1 Tablespoon extra virgin olive oil
1/2 teaspoon brown sugar
1/2 teaspoon cayenne pepper
- Mix and blend beer, 2 tablespoons hot pepper sauce, salt, black pepper and cinnamon in a bowl to make marinade. Place wings in a resealable plastic bag. Pour beer mixture over wings, seal bag and refrigerate 3 hours. Turn bag several times while marinating.
- Whisk yogurt, 2 tablespoons hot pepper sauce, soy sauce, Worcestershire, oil, and brown sugar together in a mixing bowl and blend well as a basting sauce. Taste, adjust flavoring. Refrigerate.
- Place oven rack in middle position and preheat oven to 350°. Line a large jelly roll baking pan with aluminum foil and coat liberally with no-stick cooking spray.
- Remove wings from beer marinade and place on pan. Baste wings with half of basting sauce and bake 20 minutes. Remove pan from oven and turn wings. Baste with remaining basting sauce and sprinkle with cayenne pepper. Bake additional 10 – 20 minutes until internal temperature of wings is at least 165°.
